Mint Chocolate Chip Smoothie

1/2 cup coconut milk
1 tbsp almond butter
2-3 cups fresh spinach
1/2 tsp peppermint extract
1 banana, frozen
1/2 ripe avocado, optional
2 oz. unsweetened dark chocolate

In a large cup (if using an immersion blender) or a blender, combine all of the ingredients except the chocolate and blend until smooth. Add more coconut milk if necessary to reach desired consistency. Crumble the chocolate into small pieces and stir in with a spoon. Serve immediately.
