EGG SALAD WITH ROASTED BELL PEPPER

Ingredients:
8 hard-boiled eggs, coarsely chopped
2 tbsp. fresh chives, chopped

1/3 cup mayonnaise
½ cup roasted red bell peppers, diced
½ tsp. paprika

Sea salt and freshly ground black pepper

Preparation:
Mix all the dry ingredients in a bowl.
Add the mayonnaise and stir until everything is well combined.
Season to taste, and refrigerate for 45 minutes to 1 hour.
