Healthy 4 Ingredient Paleo Peppermint Fudge

Serves 12
Smooth, creamy and ridiculously easy peppermint fudge cups using just four ingredients and ready in minutes! Made with NO dairy, butter, condensed milk, white sugar or flour, this healthy four ingredient paleo peppermint fudge is naturally gluten free, vegan, grain free, dairy free and refined sugar free! 

2 cups homemade or store bought chocolate hazelnut butter/nutella/chocolate nut or seed spread
1/2 cup coconut oil
1/4 cup pure maple syrup (can sub for brown rice syrup or pure Manuka honey)*
1/4 tsp pure peppermint extract OR 1/4 tsp peppermint oil
Sea salt, to top (optional)

Line a 12 count muffin tin with 12 muffin liners and set aside. In a microwave safe bowl or stovetop, melt your chocolate nut or seed butter with coconut oil. Stir through your pure maple syrup and mix until fully incorporated. Add your peppermint extract and whisk throughout the fudge batter. Divide mixture evenly amongst the lined muffin cups and refrigerate until firm. Top with sea salt and enjoy!
